Clean Breakfast Casserole

This clean breakfast casserole combines all the best things!  Tons of protein from the eggs and cottage cheese, a variety of veggies, and with the addition of feta cheese it's packed with flavor without being complicated!  Each bite is unique with a combination of textures, colors, and tasty goodness!  

You can leave the potatoes frozen, so no muss!  I made mine the night before and baked it in the morning and it turned out perfectly!  



Ingredients

  • 1 lb lean turkey breakfast sausage
  • 12 eggs
  • 1 pint (2 cups) fat-free cottage cheese
  • 1 cup chopped broccoli
  • 1 cup chopped bell peppers / tomatoes
  • 2 cups frozen Southern Style hash browns (cubes)
  • ¼ cup plus 2 tablespoons feta cheese
  • 2 tablespoons whole wheat flour
  • Fresh ground pepper and sea salt, to taste

Instructions

Preheat oven to 350 degrees. Coat a 9″ x 13″ casserole dish with Pam with Olive Oil. Set aside.

In a large bowl, add eggs & cottage cheese. Mix until combined. 







Stir in veggies, potatoes & feta cheese, flour, salt and pepper. Mix well. 







Layer turkey sausage and mixture in casserole dish.







Bake uncovered for about 45 minutes or until the center is set.







And voila!  You have a healthy breakfast everyone will enjoy!

So proud of you Beth! I tried this and love it! I make a big pan and just warm up a piece each morning when I'm running out the door! I'm going to try to make in muffin pan so I can store in baggies on the go!!!! Xoxox
