Clean Breakfast Casserole
This clean breakfast casserole combines all the best things! Tons of protein from the eggs and cottage cheese, a variety of veggies, and with the addition of feta cheese it's packed with flavor without being complicated! Each bite is unique with a combination of textures, colors, and tasty goodness!
You can leave the potatoes frozen, so no muss! I made mine the night before and baked it in the morning and it turned out perfectly!

Ingredients
- 1 lb lean turkey breakfast sausage
- 12 eggs
- 1 pint (2 cups) fat-free cottage cheese
- 1 cup chopped broccoli
- 1 cup chopped bell peppers / tomatoes
- 2 cups frozen Southern Style hash browns (cubes)
- ¼ cup plus 2 tablespoons feta cheese
- 2 tablespoons whole wheat flour
- Fresh ground pepper and sea salt, to taste
Instructions
Preheat oven to 350 degrees. Coat a 9″ x 13″ casserole dish with Pam with Olive Oil. Set aside.
In a large bowl, add eggs & cottage cheese. Mix until combined.

Write commentsSo proud of you Beth! I tried this and love it! I make a big pan and just warm up a piece each morning when I'm running out the door! I'm going to try to make in muffin pan so I can store in baggies on the go!!!! Xoxox
